Banana Coconut White Chocolate Cake

  We have no lack of taste testers for our Hungry Quilter recipes. As soon as Evelyn snaps the photo, the word quickly spreads that's there's free food in the break room. Adam was the first to dive into the coffee cake, and when asked to rate it on a scale from 1 to 10, he gave it a 14. That was the general consensus, with all agreeing that the cake had the perfect yummy balance of banana, coconut and white chocolate.

  The recipe is from the out-of-print Keepsake Quilting™ Cookbook published as a charitable fund-raiser in 2001.

Banana Coconut White Chocolate Coffee Cake

2-3/4 cups flour
1-1/4 teaspoons baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 cup sugar
1/2 cup packed brown sugar

2 eggs
1 teaspoon vanilla extract
4 large ripe bananas, mashed
1 cup shredded coconut
1 cup white chocolate chips
White Chocolate Glaze

   Sift the flour, baking soda and salt together and set aside. Cream the butter, sugar and brown sugar in a mixing bowl with an electric mixer at high speed until light and fluffy. Add the eggs 1 at a time and beat at low speed after each addition until well blended.

   Add the vanilla and beat at medium speed for 5 minutes. Add the bananas and beat until smooth and well blended. Add the flour mixture gradually, beating constantly at low speed just until blended; do not overbeat.

   Fold in the coconut and white chocolate chips. Pour the batter into a greased and floured 10-inch bundt pan and smooth the top of the batter. Bake at 350 degrees for 1 hour and 10 minutes or until the cake tests done.

   Cool in the pan on a wire rack for 15 minutes. Invert onto a cake plate. Drizzle the White Chocolate Glaze over the cake.

  Yield: 12 to 16 servings

White Chocolate Glaze

1/2 cup white chocolate chips
1/3 cup unsalted butter
1 tablespoon heavy cream

Combine the white chocolate chips, butter and cream in a small microwave-safe bowl or in a double boiler over hot water. Heat until the ingredients melt and whisk until smooth.
